This is my dad’s holiday recipe and I love it. If you prefer your Thanksgiving cranberries in jelly form in the shape of the can they came in, this recipe is not for you, and that’s fine because it means there’s more for me! I once made this for a Thanksgiving with my brother-in-law and his family, and his stepson (who was a crepe chef at the time) liked it enough to add it to his Black Friday menu the next day.
It’s super simple to make, too, and the sugar can be substituted with Splenda if you prefer.
3 12-ounce bags of fresh cranberries
3 oranges
3 c. sugar
Wash the cranberries and pick out any bad or soft ones; set aside. Grate the zest of two of the oranges and add to a mixing bowl. Peel all three oranges and remove seeds.
Using a food processor with a “fine” grinding plate, grind the oranges and add to the mixing bowl. Next, grind the cranberries. Mix all ingredients together with sugar. Refrigerate overnight before serving.
