
This is good wrapped in garlic naan like a taco, or put it on lettuce or sandwich bread. If you don’t have access to madras curry, try substituting with one teaspoon of regular curry powder, 1/2 teaspoon cayenne pepper, and 1/2 teaspoon mustard powder.
1/2 c. mayonnaise
1 tbs. lime juice
2 tsps madras curry
1 tsp. turmeric
pinch salt
2 cups chopped chicken, or whatever you can scrounge from a leftover roasted chicken
1 celery stalk (or 2-3 smaller stalks), diced finely
1 tbs. red onion or 1 shallot, diced finely
1 tiny apple or 1/4 c apple, chopped
1/4 c. golden raisins
1/4 c. roasted cashews, chopped roughly
2-4 tbs. cilantro, chopped (optional)
Mix the mayo, lime juice, and seasonings in a medium bowl. Add the chicken, then the apple, celery, onion; then add the raisins, cashews, and cilantro. Yum!
