Rainbow Soup

Rainbow soup in a bowl

This is a good way to use up odds and ends and clean out the fridge. It’s a bit of a pseudo-borscht due to the beets, but there’s quite a variety of vitamins to round it out.

Chicken sausage (or other type of sausage)
Ground beef
Yellow onion
Garlic
Potatoes
Beets
Carrots
Spinach/spring green mix
Beef broth
Salt
Pepper
Dill
Celery flakes
Parsley
Bay leaf
Dijon mustard

Brown the meat in the bottom of the stock pot with a little olive oil, then add broth and cover. Dice all the veggies except the spinach/greens and toss them in while the soup is simmering on medium-low heat. Add some seasoning to taste and let it cook until the veggies are soft. Toss in the spinach/greens and cover for a minute, then serve.
