Garlic Mushrooms

This easy and delicious way to cook mushrooms dates back to the Viking age. Use whichever mushrooms you like. The ones in the photo above are chestnut mushrooms, which can be found in some farmer’s markets if not larger supermarkets.

A nod goes to Eat Like a Viking: A Guide to Anglo-Saxon & Viking Age Food & Drink by Craig Brooks, Vol. 1 for this recipe, though I’ve made a couple small modifications.

Mushrooms, roughly chopped (any kind, about 8 ounces)
Butter (about 2 tbsp.)
2-3 cloves of garlic, minced
1 tsp. fresh rosemary, minced
1 tsp. fresh thyme, minced
Salt and pepper (to taste)

Melt the butter in a skillet on medium heat.

Add the mushrooms and cook for a couple of minutes. Add the rest of the ingredients and cook until the mushrooms are tender.

If you don’t eat them immediately, fry them again for a couple of minutes right before before serving. They taste best when they’re still warm.
