
Here’s a flashback to the 1990s, when package ramen was the hot new carb on the block! I love this unironically. It gives the crunch of broccoli and carrots with nuts and green onions, coupled with the noodles and a rice wine vinaigrette. And, it’s super easy to make! My cousin Julie made this for a Thanksgiving back in the day and I still make it from time to time.
1 package broccoli cole slaw (about 2-3 cups)
1 package ramen noodles, uncooked and broken up (throw out the seasoning packet)
1 bunch green onion, chopped (about 1 to 1 1/2 cups)
1 package almonds, sliced (about 1/2 cup)
1/2 cup sunflower seeds
Sauce:
1/3 c. sugar
1/3 c. oil (vegetable or sesame)
1/3 c. rice wine vinegar
1/4 c. soy sauce
Mix the sauce separately, pour onto a mixture of the rest, and stir all together. This should chill in the fridge for an hour or so before serving.
