Fruit Ice

How’s this for a refreshing homemade popsicle? It’s light and fruity, full of bananas, pineapple, and citrus juice. It’s especially great if you have bananas going brown and need to use them quickly, because they will mash up better when they’re older and softer. This was my Aunt Joann’s recipe.

If you have a popsicle mold, this recipe should work beautifully for it. You can also use ice cube trays, as in the photo above. If you don’t overfill the trays, this should fill three trays’ worth (about three dozen cubes).

You can also use the cubes as a fruity addition to a cocktail!

The amount of sugar listed below makes this very sweet as is, so you can reduce it easily or skip entirely if you want it less sweet.

2 cups sugar (for less sweetness: reduce to 1 cup or skip entirely)
2 cups water
2 mashed bananas
1 cup orange juice
4 tablespoons lemon juice
1 small can of crushed pineapple OR 1/2 can of fruit cocktail.

Boil the sugar and water for 3-4 minutes. Cool. Add the rest of the ingredients. Freeze until firm.

Use a butter knife to remove the cubes from the tray if they don’t crack out easily on their own. These will be softer than water-only ice cubes.

Serve immediately or store in a container in the freezer.
