
Sometimes you just want guacamole. This version is easy and makes a couple cups.
2 ripe avocados
1 shallot or 1/4 c. onion, minced
1 Roma tomato, minced
2 tbsp. cilantro, finely chopped
1/2 jalapeno pepper, seeds removed and finely diced
1 garlic clove, minced
juice from 1/2 a lime or 1 tbsp. juice
1 tsp. salt
Remove the seeds and skins from the avocadoes and mash with a fork or mortar and pestle. Add the rest of the ingredients and stir to mix.
Serve immediately, or cover with a layer of water in the dish to keep everything fresh until you’re ready to serve.
