
There are two biscuit recipes from my mom’s recipe box here. Choose which one you want! Full disclosure: The biscuits in the photo above came from a can. I know, I know, but they needed to be used up when I made this batch of sausage gravy. You’ll find that recipe further down. I used my grandmother’s turkey sausage recipe and the result was delicious!
Baking Powder Biscuits
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
4 tbsp. shortening/butter
3/4 c. milk
Sift dry ingredients. Rub in shortening and add liquid, slowly mixing the dough with a knife. Turn out on a floured board and roll to 1/2-inch thickness. Cut and bake at 450F for 15 minutes.
Self-Rising Flour Biscuits
2 c. flour
4 tbsp. shortening/butter
3/4 c. milk
Put flour into a food processor and process for a couple of seconds to add air instead of sifting. Add shortening, process, then add milk slowly until a ball forms. Roll out on a floured surface and bake at 450F for 15 minutes.
Gravy
1 package turkey or pork sausage (or make your own turkey sausage)
milk, cream, or oat milk
flour or corn starch
Heat a skillet on medium and add the sausage, separating it into smaller pieces with a spatula. Let it cook until it’s brown — this is the key to really good gravy! If there’s a lot of grease, you can drain it, but some grease in the pan is fine.
Add a splash or two of milk and stir into the mix, continuing to cook on medium/low heat. Sift a little bit of flour or corn starch into the pan at a time and stir before adding more so you don’t get lumps.
This should eventually thicken and cook to a beige gravy. When you’re happy with the consistency, take it off the heat and serve with the biscuits.
