Turkey Sausage

This is another recipe from my grandmother, Loretta McKinney. Serves 4. This makes sausage patties, though you could crumble it in the pan for biscuits and gravy. I’ve added a few notes on the ingredients below.

1 lb. ground turkey
1/2 c. freshly made bread crumbs
2 garlic cloves, minced
2 tbsp. parsley
1 tsp. thyme
1 tsp. sage (“more”, she says in the recipe, a bit cryptically. Maybe try 1 tbsp., because sage is all the rage!)
1/2 tsp. marjoram (or substitute oregano)
1/2 tsp. salt (You can also add more of this if desired, as it’s nowhere near as salty as store-bought sausage)
freshly ground pepper 
2 tbsp. oil
Optional: 1 tsp. chili pepper (or more black pepper) if you want more of a kick

Combine all ingredients except the oil and pat into cakes. Fry in the oil in a large skillet for 20 minutes. Brown and crisp on both sides.
