Parsley Mayonnaise

This is quick enough to whip together and adds a little something extra to regular mayonnaise. It could be good on a burger or some other sandwich you want to bougie up. I added this batch to some Salat Olivier, so it would also be great in other chicken salads.

One batch makes less than a cup. Recipe inspired by one from Kachka: A Return to Russian Cooking by Bonnie Frumkin Morales.

1/2 c. mayonnaise
1/4 c. parsley, finely minced
1 small garlic clove, finely minced
1 tbsp. fresh lemon juice

Mix together all ingredients until combined. Boom, you’ve got parsley mayo!
