
I used to work in an office that had a small cafeteria. On my first day, they had a kale salad that was amazingly perfect: light dressing, cranberries, and red onions adding flavor to the kale.
This salad would periodically appear on their menu, but when I would go up to order it, more often than not, they would tell me that a truck hadn’t arrived and the kale wasn’t available. This was in the middle of the lunch rush, and it happened often enough that it seemed more than a coincidence that the truck should be late every. single. time.
The kale was a lie!
Fortunately, this kale is not a lie! I’ve made an attempt to recreate the magic of the elusive kale salad. It’s really simple and easy to make, too!
I’ve avoided measurements on the ingredients because this is all to taste and will depend on personal preferences. (Ok, so maybe measurements are a lie if you expect measurements in a recipe. But not the kale.)
kale
dried cranberries
minced red onion
pumpkin seeds
Italian salad dressing
Gently massage the kale with your hands, breaking up the stiffness until it’s slightly limp. Chop into 1-inch strips.
Dress with the cranberries, red onion, pumpkin seeds, and salad dressing. Toss and enjoy!
