Bacon and Onions on Toast

Move over, avocado toast! Canadian bacon and onions are taking over.

Mmm, savory bacon and onions with sweet orange marmalade create a magical combination for anyone who loves sweet/salty foods. Is it a breakfast of champions? It’s definitely filling.

I made a half-sized batch and it was more than enough with two people. We each had a large slice of toast covered in this mixture, and there was still some leftover for one person to have a second portion — or, you could feed 3 people with a half batch or 6 with a full batch. 1 tbsp. olive oil
12 slices Canadian bacon, cut into big pieces
2 onions, thinly sliced (white works well if you have a choice)
3 tbsp. marmalade
3 tbsp. orange juice
1 tsp. whole-grain mustard
1 tsp. thyme
toasted bread for serving

Heat the olive oil on medium heat in a heavy-bottomed skillet and cook the bacon and onions, stirring frequently for 4 minutes until the bacon is browned and cooked.

Meanwhile, mix together the marmalade, orange juice, mustard, and thyme. Add to the pan and cook, stirring, for 2 minutes until hot.

Dish the mixture onto slices of toast.
